Sweet Potato Fries with Maple Mayo


One of my favorite restaurants in Cleveland is the Chocolate Bar. They have the best martinis and the best food. They have a sweet potato fry appetizer which is to die for severed with a trio of dipping sauces: maple mayo, rosemary butter and dark chocolate. If you go to the Chocolate Bar you have to order this appetizer!

Ingredients:
Sweet Potato Fries-3 sweet potatoes peeled and cut into fries, soak in water for 30 minutes-half the day
-2 tablespoons cornstarch
-2 tablespoons oil

Maple Mayo-1/2 cup mayo
-1/8 cup syrup
-1 1/4 tablespoons brown sugar

Preheat the oven to 475.

Toss the fries in cornstarch until covered, then coat in oil. Spread in a single layer on a baking sheet and bake   for 15 minutes.

Finished fries. 
A perfect pairing. 

The blog where I got this recipe from mentioned that it's really difficult to get the right combination of cornstarch and oil in order to get crispy fries. She was right. Our fries were very, very soggy and although the texture was off putting the flavors were spot on. The maple mayo was just like the maple mayo sauce from our beloved Chocolate Bar, we'll have to keep working on the fries.
