Mushroom Soup for Two

                                 

Happy soup Wednesday! This recipe comes from Season with Spice and is a perfect two potion soup, great for serving two people or for serving one with a leftover for the next day. I personally hate when I make a large amount of food for just me because eating the same leftovers over and over is no fun.

Ingredients:
-2 cups fresh mushrooms - cleaned and chopped finely
-1 tbsp olive oil
-3 cloves garlic - chopped
-1 tbsp butter
-1 tbsp chopped fresh thyme or 1 teaspoon dried thyme
-1 - 2 bay leaf
-1 tsp soy sauce
-1 cup vegetable stock
-1 tbsp flour
-Salt to taste
-1/2 cup heavy cream
-1/2 cup milk
-Dash of nutmeg
-Freshly ground black pepper to taste
-Fresh parsley or thyme for garnish

Heat oil and butter in a large sauce pan, once heated saute the garlic.
Add mushrooms, thyme, bay leaf and soy sauce.
Cook for about 5 minutes.   
I added a little bit of onion at this point, but you don't have to.                            
Add the broth and bring to a boil. Reduce and simmer for 10 minutes.
Slowly add in the flour stirring constantly. You want the flour to dissolve all the way.
Season with salt and pepper.
Add milk and cream, bring to a simmer and then remove the skillet from the heat.
Enjoy with some bread.

This soup was the perfect soup, it had the right amount of mushrooms mixed with the right amount of creaminess from the dairy. This is my dad's new favorite recipe. Try this soup, I promise you won't be disappointed and most ingredients are things that you already have on hand!
