Broccoli Rice Casserole


The idea for this blog comes from Cinnamon Spice and Everything Nice. This was a good dinner, and was also easy to heat up for lunch the next day. I liked this recipe too because I had all of the ingredients on hand already, so it is something easy to put together for a last minute dinner.

Ingredients:
-1 1/2 cups cooked rice
-1 cup cooked broccoli florets
-2 tablespoons butter
-2 cloves garlic, minced
-1/4 cup flour
-1 cups milk
-1 teaspoon dijon mustard
-1 1/2 cups cheddar cheese, shredded
-1/3 cup fresh Parmesan cheese, shredded
-salt and pepper, to taste

Preheat the oven to 400.

Meanwhile, cook the broccoli.
Cook the rice according to package directions.
Melt the butter and cook the garlic for about 5 minutes.
Mix in flour, milk, mustard, salt and pepper.
Melt in the  Parmesan cheese and one cup of the cheddar cheese,
until almost smooth.
Add in the broccoli and rice.
Since you are putting it in the oven, it's ok if not everything is
done at the same time.
In a greased pan, add the mix.
Top with the rest of the cheddar cheese.
Bake for 30 minutes.

This was a good combination of rice and cheese, and the broccoli was good to get some vegetables into a meal. This is also really easy to adjust for the number of people you are feeding, a large amount wouldn't take any more work.
