Berry Breakfast-Pizza Bagels


This recipe is adapted from BHG.

Ingredients:
-1/4 cup granulated sugar
-4 teaspoons cornstarch
-Dash salt
-1/2 cup water
-2 cups mixed fresh berries, such as blueberries, strawberries, and/or blackberries
-4 ounces dark chocolate cream cheese
-2 teaspoons cinnamon sugar
-2 bagels, split
In a medium saucepan combine 1/4 cup granulated sugar, cornstarch, and salt. Stir in the water. Stir in 1/2 cup of the berries. Cook and stir over medium heat until thickened. Remove from heat. 

Toast the bagels. Sprinkle each half with cinnamon sugar, top with the chocolate cream cheese.

Top each half with the berry mixture that you made on the stove and add some fresh berries.
Berries should be the star of this breakfast.
Serve for breakfast or for a snack.

I tried to eat a whole bagel, but I couldn't get through it. This is a pretty filling snack or breakfast, a serving is easily one bagel half. The cinnamon sugar was a nice touch because the cinnamon helped cut through some of the sweetness. This is a perfect recipe for the summer especially when berries are on sale because you can use a variety.

  1. Dark chocolate cream cheese? Huh. I totally thought that was Nutella! (Which also sounds delicious with this. Hmmmm...)

    1. I went to the store to buy regular cream cheese and saw the dark chocolate, milk chocolate and white chocolate from Philadelphia and decided that would taste much better.

      Nutella would be delicious too! I ate the rest of the berries as a snack dipping them in the dark chocolate cream cheese, it's my new favorite.
