Upside Down Cinnamon Apple Coffee Cake



A five ingredient dessert with about five minutes of prep time and half an hour of baking -- sign me up! I also really liked that this was semi-homemade, the cinnamon rolls were an easy way to make this as quickly as possible. If you're looking for a good brunch recipe or dessert recipe to serve with coffee after dinner this is a good recipe to choose.

Ingredients: 
-1-1/2 cups apples, chopped and peeled
-1 can (12.4 ounce) Pillsbury cinnamon rolls with icing
-2 tablespoons butter, melted
-1/3 cup packed brown sugar
-2 tablespoons corn syrup
-1/2 cup pecan halves or pieces (optional)


Mix together the melted butter, brown sugar and corn syrup.

Put half of the apples in the bottom of a greased 9 inch pie pan.

Take all of the cinnamon rolls out of the package, cut each into four pieces.
Put the cinnamon rolls and the rest of the apples into a large bowl.
Coat with the butter, brown sugar, corn syrup mixture.

Bake at 350 for half an hour.

Let cool, then flip onto a plate.
Heat up the icing until it is liquid and drizzle over the coffee cake.

Lots of icing. 
  
Serve warm.

Slice into wedges to serve.

This dessert was so easy and delicious to make. We had this as an after dinner dessert with coffee, but this would have been delicious with breakfast or even as a brunch food. This could be easily adapted with other cinnamon roll flavors, I know my store sells one with an orange flavored icing which would be good with this recipe.
