Oreo Hot Chocolate

Happy Halloween! Check out our previous Halloween recipes, Graveyard Dirt Cake and Halloween Parfaits.

I had a tough time finding these Halloween Oreos, but I was glad I did, they were perfect for this cute dessert, and hot chocolate is great now that the weather is starting to get cold.

This recipe comes from Sweet C's Designs.

-1/4 cup water
-2 tablespoons unsweetened cocoa powder
-1 1/2 cups milk
-4 oreos, crushed

This makes about 2 servings.

Crush the Oreos in a bag.
Mix all the ingredients in a saucepan. When I first put this
in the pan the cocoa powder didn't mix in well, but after
it was on the heat for a few minutes it all mixed in well.
Garnish with an Oreo.
I thought these pumpkin ones were cute.

The first time I made this, it got pretty thick, it was almost pudding like and was really hot, so I had to wait a while before I could drink it. This time it was really good, I only left it on the stove for about 2 minutes, and was a lot thinner.

Cheesy Grilled Eggplant Sandwiches

I like this sandwich because it was so easy. I always want to make something for dinner, but sometimes I have trouble because by the time I get home from work I'm already hungry and don't want to wait while I make something that will take an hour. This took at most 20 minutes start to finish, so it was a good weeknight dinner.

1/2 small eggplant, sliced
4 slices Italian bread
2 slices baby swiss
1/4 cup extra-virgin olive oil
Salt and pepper

When I was pouring the salt on the eggplant, more came out than I expected, and I tried to brush some off, but this was still pretty salty. I think the cheese was also pretty salty, so I would go easy on the salt.

Halloween Parfaits

I thought this recipe was really adorable and liked that it was so easy to make with a pretty presentation. Just mix the pudding, crush up the Oreo's and then layer.

Graveyard Dirt Cake

This is our first post for Halloween this year. Look for more holiday themed recipes later this week. The pictures for this were really cute. The name cake is a little misleading, it is more of a pudding, I ate it with a spoon. I liked that this was really themed without being too elaborate.

This idea comes from Lil Luna.

-1 package Halloween Oreos
-8 oz. cream cheese
-1 cup powdered sugar
-1 large container cool whip
-1/2 cup butter or margarine
-2 boxes vanilla pudding
-3 cups milk
-1 tsp. vanilla
-square cookies
-candy corn pumpkins

Layer the bottom of the pan with crushed Oreos.
Save some though for the top.
I used the orange Halloween ones.
First beat the cream cheese and butter with a mixer.
Then fold in all the other cake ingredients.

Spread over the Oreo crust.
Sprinkle with more crushed Oreos.
Decorate with pumpkins and tombstone cookies.

I didn't put the pumpkin candies on until right before I took the pictures and served this, I think that was a good choice because a few hours later a lot of the orange had melted into the cake and turned it orange. I thought the orange Oreos looked good on top, and the cookies were easy to make this look like a graveyard.

Apple Pie with Cheese

I saw this idea in Food Network magazine (October 2013). I did a little bit of digging on the internet, but couldn't find out too much concrete information about how this started. Apparently it's a thing and to be honest it actually tasted pretty good. You can use any type of cheese and any recipe for apple pie. I've included a link to the blog for my apple pie recipe.

-Apple Pie
-Cheese, any type

Bake your apple pie and then broil or microwave the slice with the cheese on top.
Topped with Gruyere. 
Topped with Cheddar.

The cheese added a savory note to the sweet pie. It was an interesting flavor combination, it wasn't bad. I obviously ate this twice because I tried it with two different cheeses. I think I preferred the Gruyere over the Cheddar, the flavor was a lot more subtle. Both tasted good though, this would be something I would do again for a different twist on apple pie.

Apple Bagel Sandwiches

This turned out to be really great, my mom and I ate this for a brunch at home. We thought the glaze on top was perfect, it didn't really taste spicy, but the cayenne had just the perfect amount of flavor.

I adjusted this recipe from the one in Midwest Living.

-1/4 cup strawberry jelly
-2 teaspoons lemon juice
-cayenne pepper
-2 small red and/or green apples
-cream cheese
-4 bagels

Mix the jelly, lemon juice, and cinnamon, nutmeg, and cayenne.
I just used about an equal pinch of each.
Mix cream cheese with another pinch of cinnamon and nutmeg.
Cut the apples into thin slices. I put them on a hot grill pan
for about a 2 minutes on each side.
Spread cream cheese on bagels.
Top with apples.
Drizzle with the glaze.

A suggestion on the original website was to top with walnuts or pecans, I didn't do that this time, but I think it would try it that way next time. Another thing in the original recipe was to use pumpkin cream cheese, which I tried to duplicate by using a faux pumpkin pie spice, cinnamon and nutmeg, but I think I would try it again using actual pumpkin filling.

Crock Pot Baked Apples

I made this recipe because I still have an abundance of apples. I just made one baked apple, the original recipe called for six baked apples, but I just made one for myself. I tried to adjust the proportions accordingly.

This recipe comes from Skinny Chef.

-1/8 cup brown sugar
-1/8 cup walnuts, chopped
-1 tablespoon trans-fat free margarine or butter
-1 teaspoon cinnamon
-1 Gala or Macintosh apples, cored
-1/4 cup apple juice or apple cider
Core the apple, leaving a little bit at the bottom. 

Fill with the stuffing.
Pour orange juice into the bottom of the crockpot.

Bake for 2-3 hours on high.

This tasted really good, but my apple did not stay together at all. I wasn't really paying attention to it, next time I'll try to keep an eye on the crock pot.

Apple Coffee Cake

This was a good light dessert, I made it for a group of people, it was something that wasn't too strong and had mild flavors so you know everyone will likely enjoy it.

This recipe is from Betty Crocker.

Streusel Topping
-2/3 cup Bisquick
-2/3 cup packed brown sugar
-1 teaspoon ground cinnamon
-1/2 teaspoon ground nutmeg
-1/4 cup butter

Coffee Cake
-2 cups Bisquick
-2/3 cup milk
-3 tablespoons granulated sugar
-1 egg
-2 medium cooking apples
-2 tablespoons chopped pecans

-1/2cup powdered sugar
-2 teaspoons milk

Preheat the oven to 400.

Mix together the ingredients for the topping.
In another bowl, beat the egg and mix in the other cake ingredients.
Spray a 9 inch pan with cooking spray.
Spread a layer of cake mix, add the apple slices.
Add some topping.
Add another layer of cake and another layer of topping.
Chop the pecans and top the cake.
Bake for 25 minutes.
Cool for 20 minutes. Mix the glaze, and spread on the
cake while it is still warm.
The only thing I thought was wrong with this was that the cake was a little thin. Using only half the batter for the bottom layer barely covered the pan. If I make this again, I think I might use an 8x8 pan so the cake would be a little thicker.

Frittata Bagel Sandwich

One of my favorite Food Network shows is Sandwich King, I adapted this recipe to make it a little smaller and to make it vegetarian. I based my instructions off a previously recipe that I had made -- Tortilla Espanola. The original recipe was made on the stove top and in the oven, mine is made entirely on the stove top.

Sandwich King recommends serving this with Atomic Hash Browns, a recipe that Becky previously blogged.

-2 slices vegan bacon, chopped
-6 large eggs
-1/2 cup grated mozzarella
-1/2 cup grated parmesean 
-Salt and freshly cracked black pepper
-3 ounces cream cheese, at room temperature
-1/4 cup sour cream
-1 1/2 teaspoons Sriracha (or to taste)
-1 scallion, minced
-4 everything bagel-thins, split and toasted

Mix together the eggs, crumbled bacon, mozzarella, parmesean, salt and pepper.
Whisk together.

Pour into a greased skillet and cook on medium heat for 7-10 minutes or until the bottom is set.
Then flip the frittata onto a cutting board and slide the uncooked side back into the pan.

Cook for 5 minutes.
Let the frittata rest for five minutes.

Cut into rounds and place onto the toasted bagel. 

Mix the cream cheese, sour cream, hot sauce and salt and pepper together. 

Spread the mixture onto the top of the bagel. 

Put the sandwich together.

I thought that this sandwich was good, I'm glad that we used bagel thins instead of regular sized bagels. I think a regular sized bagel plus the filling would have been too much for me to eat. The sauce added a nice kick, but wasn't overwhelmingly spicy. The frittata round allowed for egg in every bite of the sandwich.
