Baked Falafel with Tzatziki in Pita Bread


We've had such a variety of sandwiches for Sandwich Wednesday so far. This was just as different as the others, I don't think I have ever had a Falafel before this, and I was surprised at how much I liked it. These were baked rather than the fried like they are traditionally, but I thought they were good baked.


This recipe is from Baltic Maid.

Ingredients:
-2 garlic cloves
-2 tbsp fresh parsley
-1/4 red onion (plus some to slice onto the sandwich)
-15 oz can chickpeas
-1 tsp ground cumin
-2 tbsp flour
-1/2 tsp baking powder
-1/4 tsp salt
-12/ tsp pepper
-olive oil
-pita bread

tzatziki sauce
-1/2 medium cucumber
-¾ cups plain yogurt or Greek yogurt
-3d garlic cloves 
-1 tbsp olive oil
-1 tbsp vinegar
-salt

Preheat the oven to 400. Mix the garlic, parsley, onion, chickpeas and cumin in a blender or food processor. Take the mix out of the blender and mix in a bowl with flour, baking powder, salt and pepper. Form into balls and flatten. Brush with olive oil and put on baking sheet. Bake for 15 minutes, then flip, and bake 15 more minutes.

While that is in the oven, grate the cucumber. Sprinkle it with salt, let it sit for about 1/2 hour, then press out the water. Then mix with the other tazatziki ingredients. To build the sandwich layer the falafel and tzatziki.

This was pretty tasty, I thought the tzatziki sauce really brought it all together. This was really filling, I didn't think one sandwich looked like a lot, but it was much more than it looked.
