Crock Pot Cajun Gumbo


This was really simple to make, and it was nice to be able to make a vegetarian version of gumbo. It had plenty of flavor and textures so I don't think anyone would even miss the meat if they are not a vegetarian.

This is the first Mardi Gras recipe from this year. Later this week we'll have a sandwich, a drink, and an appetizer.

Ingredients:
-2 - 15 oz. cans black beans, rinsed and drained
-28 oz. can diced tomatoes
-16 oz. pkg. frozen loose-pack pepper stir-fry vegetables
-1- 15 oz can okra
-3 tsp. Cajun seasoning
-white rice

Mix all the ingredients in a crock pot and cook for 3 hours on high, or 6-8 hours on low.
Cook and serve over rice.









I thought this was pretty tasty, and it was a filling meal. The original recipe said the rice was optional, but I'm glad we included it, I thought it was nice to balance out all of the stir fry flavors.
