General Tso's Cauliflower


I found a recipe similar to this on Pinterest and thought that it would be good to try. Cauliflower is my favorite vegetable, I love how versatile it is in recipes. It can be a side dish, appetizer, or a main dish like I used it in this recipe. To make this a more substantial meal, serve with rice.

Ingredients: 
Cauliflower
-1/2  head of cauliflower cut into florets
-2 tsp olive oil
-1 egg 
-1/3 cup flour 
-3 tbs soy sauce
-peanut oil for frying

Sauce
-1/2 cup brown sugar
-3 tbsps hoisin
-3 tablespoons white vinegar
-3 tablespoons ketchup
-2 tablespoons soy sauce
-1/2 cup water
-6-8 spring green onions, sliced
-3 tbsps fresh ginger finely chopped
-Almonds, sliced

Mix together all of the ingredients for the batter in a medium mixing bowl, add the cauliflower into the bowl to coat. Set aside for 20 minutes.

Mix together the brown sugar, hoisin, white vinegar, ketchup, soy sauce and water. Whisk together.
Heat oil in a large skillet.
Fry the cauliflower until golden brown.
Drain the fried cauliflower on a paper towel. 

Dice the ginger, slice the almonds and green onions. 

Once all of the cauliflower is fried, clean out the pan and add the sauce, ginger and green onions.
Bring to a boil.

Add in the cauliflower and almonds.
Top with additional sliced almonds and green onions.  

Overall this recipe was good, I really like using cauliflower as a substitute for meat, it's probably my favorite vegetable. The batter had a lot of soy sauce in it and I think that was the predominant flavor of the cauliflower. I had used the sauce in a previous recipe, the sauce is full of flavor.
