Skillet Nachos



I'm loving the cast iron skillet that Dave got me for my birthday a few months ago. It has opened up a whole new set of recipes that I can put together. These nachos are a simple snack or a small dinner depending on how you portion it.

A Vegetarian & Cooking! original.

Ingredients:
-Half a bag of tortilla chips
-Mexican blend shredded cheese
-1/2 green pepper, diced
-1/2 red pepper, diced
-1 tomato, diced
-2 green onions, sliced thin
-Avocado

Build your nachos in a greased cast iron skillet. Nachos, cheese, toppings. Bake at 350 for 5-7 minutes or until cheese is melted. Top with diced avocado once you remove the skillet from the oven.


  





These were delicious, we hadn't planned on eating these for dinner, but Dave and I ate the entire skillet for a meal. You can customize this however you like, but the cast iron skillet is the perfect vehicle to use to heat up all of the ingredients. There was minimal clean up on this too, most of the cheese stayed on top of the chips.
