Snowman Cheese Ball


Welcome to the Christmas dinner series! This meal starts out with an unbelievably cute appetizer which can be made the day before. The appetizer also involves no cooking, so if you want to free up space in the oven or on the stove this recipe is perfect.

A Hamless Holiday
Snowman Cheeseball, appetizer

Ingredients:
-8 ounces cream cheese, softened
-8 ounces shredded cheddar cheese
-1/4 cup  finely chopped fresh chives
-1/4 cup slivered almonds
-1/4 tsp.  ground cayenne pepper
-1/4 cup  grated parmesan cheese
- Peppercorns
-1  baby carrot

(I decorated the snowman/plate with a fried egg, fresh spinach and more carrots, those are all optional).

Mix together the cream cheese, cheddar cheese, chives, almonds and cayenne pepper. Divide the cheese mixture into 3 different-size balls (1 small, 1 medium and 1 large). Refrigerate for at least one hour.

Once the mixture is firm, coat with Parmesan. Arrange in line on serving plate to resemble a snowman lying down (largest at bottom, smallest at top). Decorate with the peppercorns and carrot. Serve with tortilla chips or crackers.


I think that this turned out to be so cute, I was incredibly happy with how it turned out. The cheese ball had great flavor, the almonds gave it a little crunch and the chives added some color. This is a recipe I will be making again.
