Crispy Baked Coconut Onion Rings with Sweet Chili Sauce



These subtly sweet and crunchy onion rings are an excellent appetizer or snack -- and being baked means they're light and lower in calories.

Ingredients:
-2 to 3 small onions, sliced latitudinally into rings
-1/2 c flour
-1 t paprika
-1/2 c milk
-1 egg
-1 1/2 c panko bread crumbs
-3/4 c shredded, chopped coconut
-1 1/2 t salt
-1/4 c honey
-1 T sriracha
-1 t minced garlic
-1/2 T rice vinegar

After slicing the onions into rings, prepare three small bowls, one with flour and paprika, the second with milk and egg, and the third with bread crumbs, coconut and salt, then stir them and line them up in that order.

Dip the onion rings first in the flour mixture, then the egg, and lastly in the panko, shaking off any excess between steps. Place the rings in a single layer on a parchment paper-lined cookie sheet.

Bake at 450 degrees for about 20 minutes, flipping all rings at halfway. Makes two sheets.

While the onion rings are baking, whisk together the remaining ingredients for the sweet and sour hot sauce.







The toasted tinge on the coconut and panko looks exceptional, the flavors balance well, and the onion rings deliver a satisfying crunch.
