Honey Yogurt Quinoa Parfait

Eating cereal for breakfast every morning eventually gets boring, no matter how many times we try to switch up our cereal brand. This parfait takes one of those cereals that we munch on every morning and helps incorporate it with other ingredients in the kitchen to help spice up breakfast.

Recipe from Pinch of Yum.

Ingredients:

-1/2 cup plain Greek yogurt
-1/2 cup cooked quinoa
-a few teaspoons honey (to taste)
-1/2 cup Cheerios + Ancient Grains cereal
-1/2 cup pomegranate arils or other fruit

Mix the Greek yogurt with the quinoa and the honey.
Layer half of the yogurt mixture into the bottom of a round glass. Cover with half of the cereal, half of the pomegranate arils, and repeat layers once more. Serve immediately!

Dave enjoyed how easy this recipe was to put together before work and he thought that it was pretty tasty. He really enjoys eating yogurt for breakfast in various forms and adding several ingredients we already had on hand was easy for him to do. I really like the Cheerio's Ancient Grains cereal by itself as well, it has good flavor and a nice crunch.
